Allene oxide synthase, Parthenium argentatum (EC 4.2.1.92), is a potent antioxidant enzyme that eliminates lipid hydroperoxides from biological samples. It converts lipoxygenase-derived fatty acid hydroperoxides into unstable allene epoxides.
